Kids Healthy Mixed Lentils

Mixed Lentils Curry



Ingredients 


Black Eyed Peas: 1/2 Cup
Split Redgram:1/2 Cup
Split Bengalgram:1/2 Cup
Red Kidney Beans:1/2 Cup
White Kidney Beans: 1/2 Cup
Whole Blackgram: 1/2 Cup
Split Peas:1/2 Cup
Onions: 2
Tomatoes: 2
Cumin Seeds: 1Teaspoon
Coriander Powder: 1 Teaspoon
Garam Masala: 1 Teaspoon
Ginger: 1/2 Teaspoon
Garlic:1/2 Teaspoon
Green Chillies: 2
Red chili Powder: 1/2 Teaspoon
Water to boil
Salt to taste
Sugar: 1/8th Teaspoon
Coriander Leaves: 1-2 Teaspoons 

Method

  • Put all the lentils in a pressure cooker and pour water and boil until soft. Add the chopped onions, shredded ginger, garlic, and green chilies to the pan. When the onions turn golden brown, add the chopped tomatoes and add the salt, garam masala, coriander powder, chili powder, and sugar. Allow to boil for 5-8 minutes and serve hot with Roti/Rice/Pulka.

* If you don't have a pressure cooker, boil it in a big pan with a lot of water till it becomes soft

* You can soak all the lentils overnight and can boil it in the morning if you want to or can just boil it before you are preparing.

Cheese Quesadilla / Cheese Paratha

Quesadillas are generally prepared with Tortilla(Almost similar to Indian Roti) stuffed with grated cheese, Tortillas can be made with either all purpose flour or whole wheat flour, i always prefer whole wheat tortilla's as they are rich in fiber. 


Ingredients 

Whole Wheat Flour : 1 Cup
Water : 1 1/2 Cup
Salt : 1/8th Teaspoon
Grated Cheese : 1/4th Cup

Method

Whisk the flour and salt in a bowl, add water and mix well untill the dough becomes soft and elastic

Make the dough into 2 equal balls and with a rolling pin roll the dough balls to a thin tortilla, repeat the same process for the second dough ball.

Now place it on a hot skillet and cook till one side becomes light golden brown, now flip and let the other side also turn golden brown, at this point lower the heat and sprinkle some grated cheese on 1 half of the tortilla and fold the tortillas in half over the cheese to make a half-moon. 

Cook for 2 more minutes or till the cheese is all gooey.

Transfer it to a plate and serve with a ketchup or can eat directly without any dip.

Note: 

You can use grated tofu or grated paneer instead of cheese, can also brush some oil or butter to cook the tortilla if you want.




Roasted Edamame Seeds




Ingredients

Edamame Seeds * : 1cup Frozen / Fresh pack
Olive Oil : 1 Teaspoon
Salt and Pepper to taste.

Method

Put a pan on stove and add olive oil and once the oil gets hot add the seeds.

Now let the seeds roast till they get nice coat of brown texture and then sprinkle in some salt and pepper and turn of the flame.

Serve it as a snack or pack it in the lunch box for your kids and you can munch some too ;-)

Note : 

Edamame seeds contain good amounts of  protein, fiber, iron.

You can even dry roast the seeds without adding any oil or can replace oil with clarified butter.

If you didn't find edamame seeds in your place, substitute with any kind of beans like soaked kidney beans, soaked peas, soaked black eyed peas.

Idli



Ingredients
Idli Moulds : 2
Idli Batter * : As required
Water : 2 cups
Idli Steamer / Pressure Cooker or any Deep pan with a lid
Clarified Butter / Ghee : 2 teaspoons
Salt to taste


Method

Add salt in the batter and pour the idli batter in the moulds and steam them in a steamer/pressure cooker ( do not put the whistle) or any deep pan with a lid, whatever you use to prepare the idli's make sure you add enough water for steaming in that before placing the moulds.


Now steam it for 12-15 minutes, if the idlis are not done yet, steam little more till they are done.


In a plate, put the idlis by gently removing them from the moulds with a spoon.


Serve the hot idlis with your desired chutney or spice powder or sambar and ghee.(Clarified Butter)

Basic Upma(Bombay Ravva/Semolina)




Ingredients
Bombay Ravva/Semolina: 1 Glass
Water : 2 Glasses
Onions: 1 
Oil: 1 Teaspoon  
Salt to taste.
Cashewnuts: 3-4
Greenchillies: 2
Ghee: 1 Teaspoon
CurryLeaves : 1 Stem of Leaves
Mustard Seeds : 1/2 Teaspoon
Grated Ginger : 1/2 Teaspoon

Method
First put a pan on the stove and put some ghee and oil and add cashewnuts,mustardseeds,onions,grated ginger and chillies.

Now after they turn little brown,add 2 glasses of water,once the water starts boiling,simmer the stove and  add salt and bombay ravva/semolina.

After 2-3 minutes,turn off the stove and garnish with curryleaves and serve hot with coconut chutney or any pickle.

* You can use Wheat Ravva/Broken Wheat/Cracked Wheat instead of Bombay Ravva.

* You can also add vegetables like  Carrots,Tomatos,Potatos,Cabbage,Cauliflower etc.

Coconut-Milk Rice (Kobbari Annam)



Ingredients
Rice: 2 Cups
Coconut Milk : 4 Cups
Potato: 3
Onions: 2 
Greenpeas:1 Cup 
Greenchillies: 5 or 6 
Cardamom: 1 Teaspoon 
Cinnamon: 1 Teaspoon 
Cloves:1/2 Teaspoon 
Cashewnuts: 1 Teaspooon 
Ginger-Garlic Paste: 2 Teaspoons 
Ghee: 2 Teaspoons
Oil: 3 Teaspoons 
Coriander Leaves: 1 Bunch
Salt to taste.

Method
First put a pan on the stove and put some ghee and add Cashewnuts,Cardamom,Cinnamon and Cloves.

Now after they turn little brown add potatoes,onions,green chillies and greenpeas.After they turn golden brown,add ginger-garlic paste and add some oil and cook for 2 minutes.

Now add washed rice to the vegetables and fry for 2 to 3 minutes and add cocnut milk to the rice and close it with a lid.

When the rice starts boiling and when the bubbles are visible add salt and close it with a lid,wait till the rice becomes soft.You can also put the rice in a pressure cooker after adding salt.(2 Whistles)

Transfer it to a bowl and garnish with coriander leaves.

Apple Shake


Ingredients
Apples: 3
Milk: 2 Glass
Sugar:4 Teaspoons
Cashew nuts: 3 Teaspoons

Method
   Cut the apple into pieces(remove the seeds)and put them in a mixer jar and add milk,sugar and beat well.

    Now transfer it into a glass and garnish with small pieces of cashew nuts.

Semolina and Saffron Sweet (Ravva Kesari)




Ingredients
Semolina: 1/2 Glass
Water: 1 1/2 Glass
Sugar*: 1 1/2 Glass
Ghee*: 4 or 5 Teaspoons
Saffron*: 1 Teaspoon
Cashewnuts: 1 Teaspoon
Raisins: 1/2 Teaspoon

Method
   Put  pan on the stove and put little ghee and add semolina and fry for 2 minutes.

   Now add sugar to it and again fry for 2 to 3 minutes.Now add water and remaining ghee to it.

   Let it boil till semolina becomes soft,meanwhile in another pan put some little ghee and add cashewnuts and raisins and fry till golden brown.

   After semolina becomes soft garnish woth fried cashew,raisins and saffron.

* You can decrease/increase the quantity of sugar and ghee.
   Saffron is optional it is just for garnishing.

Lemon Rice ( Pulihaara)


Ingredients
Rice : 1 Glass
Water : 2 Glass
Lemon juice/Tamarind juice*: 4 or 5 Teaspoons
Mustard Seeds : 2 Teaspoons
Split Black Gram : 3 Teaspoons
Split Bengal Gram : 3 Teaspoons
Fenugreek Seeds: 1/2 Teaspoon
Green Chillies : 3
Red Chillies : 3
Curry Leaves : 2 Stems of Leaves
Ground Nuts : 2 Teaspoons
Turmeric : 1 Teaspoon
Sugar : 1/2 Teaspoon
Oil : 2 Teaspoons
Salt to taste.

Method
Boil the rice and keep it aside,now put a pan on the stove and add some oil and add all the above ingredients except (Turmeric,Lemon/Tamarind Juice,Salt and Rice).

Now add the roasted ingredients to the rice and add salt,sugar,lemon/thick tamarind juice,turmeric to the rice and mix well.

Serve Hot.

* If you are using tamarind juice then take thick juice from it and let it boil with the ingredients for 2 mins and then add to rice.(This is optional)
** You can also use electric rice cooker to cook the rice .

South Indian Soup / Rasam (Chaaru)



Ingredients
Water : 1 Glass
Turmeric : 1/2 Teaspoon
Sugar : 1/2 Teaspoon
Green Chillies : 1 or 2* 
Rasam Powder: 1 or 2 Teaspoons
Tamarind : Small lemon size
Curry Leaf: 1 Stem of Leaves
Salt to taste.

Rasam Powder Preparation
Coriander Seeds : 100gms
Pepper : 50gms
Cumin Seeds : 2 Teaspoon
Curry Leaves : 10 Stems of Leaves
Split Red Gram : 1 spoon
Red Chillies : 5

Method
Roast all the above ingredients in a pan and powder to a fine powder using mixie.

This will keep well for months in a airtight container.

Rasam Preparation
Put water in a vessel and add Turmeric,Salt,Sugar,Tamarind,Chillies,Curry leaves and Rasampowder.(No need to follow same order).

Boil for some time like about 5 mins and serve hot with rice.

* Depends upon your taste.
Note:Instead of tamarind you can use lemon(one).
You can also add tomatoes,and drumsticks if you want.

Plain Toor Dal (Muddha Pappu)


Ingredients
Split Red Gram: 1 Cup
Water: 2 Cups
Salt to taste.

Method
1. Put Dal and Water in a pressure cooker and close it with a lid.

2. Keep the whistle on the lid and wait till 3 or 4 whistles and switch off the stove.

3. After it gets cool remove the whistle and add salt to the boiled dal and serve hot with rice,ghee and any pickle.


Note: Whatever you cook in the pressure cooker you should add some little water in the cooker first and then place any bowl/vessel.If you are cooking directly in the pressure cooker itself,then no need to add extra water to the cooker.

Plain Rice (Annam)



Ingredients
Rice - 1 cup
Water - 2cups of water.

Method
1. Add water to washed rice and place it in the separator of a pressure cooker or directly in the cooker and close it.
2. Place the weight on the cooker when the steam comes out freely from the chimney.
3. Cook the rice in the cooker for 3 or 4whistles, until it is done.
4. Serve hot.


Note: Whatever you cook in the pressure cooker you should add some little water in the cooker first and then place any bowl/vessel.If you are cooking directly in the pressure cooker itself,then no need to add extra water to the cooker.


** You can also use electric rice cooker to cook the rice.
