Vegetable Quinoa Upma



Though technically not a grain, quinoa can substitute nearly any grain in cooking. Due to its delicate taste and rich amounts of protein, iron, potassium other vitamins and minerals, it is quite popular. It is also a good source of dietary fiber and is easily digested.
 
Ingredients

Quinoa : 1 cup
Water : 2 cups
Onions: 1
tomatoes : 1/2 piece
Carrots: 2-3
Cabbage: 1/2 cup
Beans: 1/2 cup
Green Peas : 1/2 cup
Sweet Corn : 1/2 cup
Cashew nuts and Almonds : 1/2 cup
Peanuts: 1/2 cup
Green chillies : 3-4
Split bengalgram: 1/2 teaspoon
Split blackgram: 1/2 teaspoon
Mustard seeds: 1/2 teaspoon
Oil: 2 Teaspoons
Salt to taste

Method
First put a pan on the stove, add some oil and add bengalgram, blackgram, mustard seeds, peanuts, cashewnuts and almonds.

Once the mustard seeds starts to splutter add onions, green chillies and all the remaining vegetables, saute them well and close it with a lid.

Now, add water to the half cooked vegetables and once it starts boiling add salt and then add washed quinoa and close it with a lid and cook on medium flame.

Once the quinoa is nicely cooked with the vegetables serve hot with any pickle.

Basic Upma(Bombay Ravva/Semolina)




Ingredients
Bombay Ravva/Semolina: 1 Glass
Water : 2 Glasses
Onions: 1 
Oil: 1 Teaspoon  
Salt to taste.
Cashewnuts: 3-4
Greenchillies: 2
Ghee: 1 Teaspoon
CurryLeaves : 1 Stem of Leaves
Mustard Seeds : 1/2 Teaspoon
Grated Ginger : 1/2 Teaspoon

Method
First put a pan on the stove and put some ghee and oil and add cashewnuts,mustardseeds,onions,grated ginger and chillies.

Now after they turn little brown,add 2 glasses of water,once the water starts boiling,simmer the stove and  add salt and bombay ravva/semolina.

After 2-3 minutes,turn off the stove and garnish with curryleaves and serve hot with coconut chutney or any pickle.

* You can use Wheat Ravva/Broken Wheat/Cracked Wheat instead of Bombay Ravva.

* You can also add vegetables like  Carrots,Tomatos,Potatos,Cabbage,Cauliflower etc.
