Lemon Rice ( Pulihaara)


Ingredients
Rice : 1 Glass
Water : 2 Glass
Lemon juice/Tamarind juice*: 4 or 5 Teaspoons
Mustard Seeds : 2 Teaspoons
Split Black Gram : 3 Teaspoons
Split Bengal Gram : 3 Teaspoons
Fenugreek Seeds: 1/2 Teaspoon
Green Chillies : 3
Red Chillies : 3
Curry Leaves : 2 Stems of Leaves
Ground Nuts : 2 Teaspoons
Turmeric : 1 Teaspoon
Sugar : 1/2 Teaspoon
Oil : 2 Teaspoons
Salt to taste.

Method
Boil the rice and keep it aside,now put a pan on the stove and add some oil and add all the above ingredients except (Turmeric,Lemon/Tamarind Juice,Salt and Rice).

Now add the roasted ingredients to the rice and add salt,sugar,lemon/thick tamarind juice,turmeric to the rice and mix well.

Serve Hot.

* If you are using tamarind juice then take thick juice from it and let it boil with the ingredients for 2 mins and then add to rice.(This is optional)
** You can also use electric rice cooker to cook the rice .

Brinjal / Eggplant Fry ( Vankaya Vepudu)



Ingredients
Brinjals: 250gm
Onions : 1 or 2*
Oil : 2 Teaspoons
Salt and Redchilli powder: Depends on your taste.

Method
Wash the brinjals and cut them into small pieces(Give a slit in the middle and start cutting into pieces),also cut the onions to medium size.

Put a pan and add oil and now put both onions and brinjals,let them fry untill they gets soft and now add salt and chillie powder.

Serve hot with rice.

* Depends on the size of the onion.

Brinjal / Eggplant Chutney (Vankaya Pachadi)

Ingredients
Big Brinjal:1
Tamarind :Big Amla Size
Red Chillies :1 and 1/2
Green Chillies :1
Split Black Gram :1 Teaspoon
Cumin Seeds :1 Teaspoon
Mustard Seeds :1/2 Teaspoon
Oil :1 or 2 Teaspoons
Salt to taste
Coriander for garnishing.

Method

Wash the brinjal and remove those small leaves on the top and dont remove that stem..

Now apply little oil all over the brinjal and burn it on the burner holding the stem.It turns black but dont worry just keep it aside for sometime.

Now put a pan on the stove and pour some little oil and add mustard seeds,cumin seeds,black gram,redchillies,greenchillies and tamarind.

Now powder these to a fine powder in a mixie,take the brinjal remove the black layer,check for any seeds,if there remove them and add that to the above powder,add salt and grind it to paste.

Take that in a serving bowl and garnish with coriander leaves ,serve with rice.

South Indian Soup / Rasam (Chaaru)



Ingredients
Water : 1 Glass
Turmeric : 1/2 Teaspoon
Sugar : 1/2 Teaspoon
Green Chillies : 1 or 2* 
Rasam Powder: 1 or 2 Teaspoons
Tamarind : Small lemon size
Curry Leaf: 1 Stem of Leaves
Salt to taste.

Rasam Powder Preparation
Coriander Seeds : 100gms
Pepper : 50gms
Cumin Seeds : 2 Teaspoon
Curry Leaves : 10 Stems of Leaves
Split Red Gram : 1 spoon
Red Chillies : 5

Method
Roast all the above ingredients in a pan and powder to a fine powder using mixie.

This will keep well for months in a airtight container.

Rasam Preparation
Put water in a vessel and add Turmeric,Salt,Sugar,Tamarind,Chillies,Curry leaves and Rasampowder.(No need to follow same order).

Boil for some time like about 5 mins and serve hot with rice.

* Depends upon your taste.
Note:Instead of tamarind you can use lemon(one).
You can also add tomatoes,and drumsticks if you want.

Plain Toor Dal (Muddha Pappu)


Ingredients
Split Red Gram: 1 Cup
Water: 2 Cups
Salt to taste.

Method
1. Put Dal and Water in a pressure cooker and close it with a lid.

2. Keep the whistle on the lid and wait till 3 or 4 whistles and switch off the stove.

3. After it gets cool remove the whistle and add salt to the boiled dal and serve hot with rice,ghee and any pickle.


Note: Whatever you cook in the pressure cooker you should add some little water in the cooker first and then place any bowl/vessel.If you are cooking directly in the pressure cooker itself,then no need to add extra water to the cooker.

Plain Rice (Annam)



Ingredients
Rice - 1 cup
Water - 2cups of water.

Method
1. Add water to washed rice and place it in the separator of a pressure cooker or directly in the cooker and close it.
2. Place the weight on the cooker when the steam comes out freely from the chimney.
3. Cook the rice in the cooker for 3 or 4whistles, until it is done.
4. Serve hot.


Note: Whatever you cook in the pressure cooker you should add some little water in the cooker first and then place any bowl/vessel.If you are cooking directly in the pressure cooker itself,then no need to add extra water to the cooker.
